Never thought of making something with cucumber but then I had cucumber sambar at my friend’s place and that inspired me to try make this curry. Quick and simple – hope you all enjoy it !
If you want to make this at the last moment before lunch or dinner – it’s a great idea. The cooking time is less than 10 minutes!
Ingredients:
- 1 big chopped cucumber ( I have used the cucumber with seeds , you can remove seeds if you want. )
- 1/2 tsp cumin seeds
- 1 tsp oil
- 1/2 tsp red chili powder
- 1/2 tsp sugar
- 1/2 tsp garam masala powder
- salt to taste
- 2 dried red chilies
- pinch of dried mango powder
Method:
- Heat oil in a pan
- Add cumin seeds, asafoetida and dried red chilies.
- Once the cumin seeds are a little brown , add chopped cucumber.
- Add red chili powder, garam masala powder, salt, sugar and dried mango powder.
- Cook it with lid covered for 8 to 10 mins
- Ready to serve.
